The 2021 Single Block 968 Méthode Traditionnelle is a refined sparkling wine that highlights both patience and precision in its craft. Made from 100% Chardonnay, the fruit is sourced exclusively from the celebrated Flanders Block, located beside Grove Estate.

The grapes were carefully hand-picked at optimal ripeness and gently pressed before undergoing primary fermentation. The wine was then bottled for secondary fermentation and aged on lees for an extended 968 days, allowing exceptional complexity, texture and depth to develop naturally over time.

Following this prolonged maturation, each bottle was traditionally riddled, disgorged and hand-labelled, completing a meticulous process that honours the classic méthode traditionnelle style.

The result is a sparkling wine with fine, persistent bubbles and remarkable elegance. Layers of subtle brioche, citrus and delicate orchard fruit are supported by vibrant acidity, leading to a beautifully balanced palate and a long, refined finish.
