TASTING NOTES
The classic Italian variety, Nebbiolo, shows enormous potential in the cool
inland New South Wales region of Hilltops around the town of Young.
It is warm enough here to get the tannins ripe and build a
balanced mid-palate structure, but the elevation of around 550 metres above
sea level adds the benefits of cool nights for gradual flavour development
and aromatic complexity.
Floral notes and gentle red plum characters here interwoven with charcouterie
and savoury spice, immediately suggesting something out of the ordinary
as Australian wines go.
